A health expert has shared her “favourite” breakfast that will “set you up for the day”. This simple recipe contains plenty of protein and fibre, helping you stay “fuller for longer”. In a


video uploaded to her Instagram account, retired GP Doctor Clare Mosley explained how to make green scrambled eggs. The health columnist added this was also a “favourite” of her late


husband, Dr Michael Mosley, the BBC presenter who died last year. Dr Mosley said she is “often” asked what she eats for breakfast. In the video’s caption, she said: “I am lucky, as I don’t


have a sweet tooth to battle with.” However, she always aims to include protein and fibre in her meals. She continued: “I aim have protein at every meal. Your body needs it and it is


satiating, so you don’t get as much cravings. “By adding the greens you’re also upping the fibre content which also leaves you full for longer. And what’s more, it will make your friendly


bugs in your gut microbiome thrive too.” Speaking in the video, she advised just using any greens, such as spinach, that are leftover from the night before. It is also important to choose


seeded bread for your toast for the added fibre. Dr Mosley continued: “Green scrambled eggs, it’s one of my favourite breakfasts actually. Leftover greens from the night before, some toasted


bread - seeded, lots and lots of fibre in it. “I put a bit of Marmite on it because that adds umami flavour. And here are the eggs already cooked I’m just putting them in and mixing in the


greens and just giving it a quick swirl. “Both of them have been cooked already. And here we go, dollop it on - not very elegantly I have to say but it tastes and looks fantastic. It needs a


little bit of pepper and I also add for just a bit of extra flavour some chilli flakes. “And that is the breakfast. Super healthy, keep you going well into the day and just so simple and


delicious.” The full recipe for one person is: * Toast a thin piece of wholemeal seeded sourdough and spread with butter or a drizzle of olive oil * Meanwhile, gently whisk two medium eggs


in a bowl * Use a small non-stick pan over a gentle heat and add a dash of olive oil or butter. * Stir in the eggs and greens, stirring frequently until hot and creamy * Place the green


scrambled eggs on the prepared toast * Add a pinch of salt and plenty of black pepper and, for extra flavour, a pinch of chilli flakes for a bit of spice if you like. She added: “That should


set you up for the day!”
