Pancake day 2018, also known as Shrove Tuesday, is on Tuesday 13 February this year, and you will be keen to get the right batter recipe for your pancakes. 


This simple pancake batter recipe contains flour, eggs, butter and milk. 


Historically, Pancake Day was a time to use up these ingredients before Lent, a time of fasting.


It is now a great excuse to make lots of pancakes at home, which you can enjoy for breakfast, lunch or dinner.

This basic pancake recipe is wonderfully simple and perfect for cooking with kids. Make up a big batch for Pancake Day and get flipping.


In a large mixing bowl, mix together the flour and salt. Make a well in the middle of the flour and crack the eggs into it. Whisk together, gradually adding the milk and water until you’re


left with a smooth batter.


Over a medium heat, add a small knob of butter to a frying pan. Pour in enough batter to coat the base of the pan, and cook until your pancake is golden underneath. Flip over to cook the


other side.


Once cooked, remove the pancake from the pan and repeat the process until all the batter is used up.


Serve the pancakes immediately, sprinkled with caster sugar and a good squeeze of lemon juice.
